Feature Recipe: Shrimp & Crab Louie Salad
"This classic salad makes a great impression without a lot of work. Perfect for an afternoon get together!" - Chef Scott Pratico, Seasons in the Park Restaurant
Salad Ingredients: • 2 Heads butter lettuce • 8oz baby shrimp meat • 8oz Dungeness crab meat • 2 hardboiled eggs cut into 1/4's • 1 pint ripe cherry or grape tomatoes cut in 1/2's • 8oz asparagus, trimmed, peeled, steamed & chilled • 1/2 English cucumber cut into coins
Dressing Ingredients: • 1/2 cup mayonnaise • 1/4 cup chili sauce • 1tsp lemon juice • splash Worchestershire • 2 green onions finely sliced • 1 tbsp finely diced green pepper • 1 tbsp finely diced pickle • 1/4 tsp fresh ground black pepper
To Assemble: 1) Toss lettuce gently with enough dressing to coat evenly. Arrange leaves on 4 plates. 2) Arrange remaining ingredients artfully around the plate. 3) Crack a bottle of bubbly and enjoy!
